29 Things

My 29th birthday was Monday, and I’ve decided to totally rip off something I saw on my friend Michael’s blog.

Girl is Grateful

 

I’ve decided to start a regular feature here on my little ol’ blog.

The idea came to me when I was driving to work early on Monday morning.

I was sleepy. I was grouchy. I was not in the mood to go to work.

As I was driving, it hit me. 

I have no right to be in such a foul mood. I’m extremely fortunate to have a job to go to early on a Monday morning. In fact, there’s nothing in my life to complain about at all!

Soooo….welcome to the first ever “Girl is Grateful” post! 

Whenever I’m feeling grouchy and need an attitude adjustment, I’ll write about three things in my life that I’m grateful for.

(Note: I’m not grouchy today, but I’m making up for Monday morning.)

1 – I’m grateful for theBOY. He sacrifices so much to make theBABY and me happy. I’m lucky to have someone so willing to do the “dirty work” for me! (Now I just need to get better at doing it for him in return!)

2 – I’m grateful for the sunshine. It’s so nice to see it again! And it feels so nice & warm when it’s streaming through the windows.

3 – I’m grateful for the food in my cupboards. We recently volunteered with Feed My Starving Children to pack thousands of meals for children who are starving to death in Haiti and other countries throughout the world. Did you know approximately 18,000 kids die EACH DAY from starvation? We packed enough meals in an hour and a half to feed 212 kids for a year. That’s amazing.

Spring Is Coming!

Daffodils = Spring

What a difference a little bit of sunshine makes!

I know the official start of Spring is still several days away, but when the weather hits 60+ degrees (like it did today) I get anxious.

One of the surest signs the bitter cold is behind us? Daffodils poking through the dirt.

No…it hasn’t happened yet.  Soon, though. I just know it. One day they’ll just appear out of nowhere.

I can’t wait.

Slow but Quick, Easy yet Delicious!

I don’t like to cook. If I’m spending time in the kitchen I’d much rather be baking.

But, as I’ve mentioned before, not liking something doesn’t make it go away!

Recently I discovered the most delicious recipe for chicken curry from Kraft Foods. It’s been such a hit with theBOY that I  just have to share it. (Today he said it’s a 10 out of 10!)

The best part is that it’s a crockpot meal! Better yet, it’s the easiest crockpot meal ever!

The recipe calls for chicken thighs, but I use boneless, skinless chicken breast instead.  It gets so tender and shreds up so nicely! I serve it over brown rice. YUM.
