I don’t like to cook. If I’m spending time in the kitchen I’d much rather be baking.
But, as I’ve mentioned before, not liking something doesn’t make it go away!
Recently I discovered the most delicious recipe for chicken curry from Kraft Foods. It’s been such a hit with theBOY that I just have to share it. (Today he said it’s a 10 out of 10!)
The best part is that it’s a crockpot meal! Better yet, it’s the easiest crockpot meal ever!
The recipe calls for chicken thighs, but I use boneless, skinless chicken breast instead. It gets so tender and shreds up so nicely! I serve it over brown rice. YUM.

I pulled this off of allrecipes.com a while ago.
It says pork tenderloin, but we’ve used just a regular pork loin or a beef roast. Both taste yummy!
For the garlic, I sometimes use the kind that comes preminced in the jar. I just use 3 tsp since the flavor is so concentrated (the conversion is on the jar lid). It saves time and keeps your fingers from being smelly!
