Mexican Stuffed Shells

 

This recipe is a little more involved than I like to get on a week night, but reader JoAnn recommended it so highly that I decided to give it a shot.

Luckily, both babes cooperated with me while I assembled the dish.

Even luckier, it turned out great.

I didn’t have any cream cheese in the house (oops!), so I substituted plain Greek yogurt. Worked like a charm.
