MUST Make Crusty Bread

theBOY’s mom served the most delicious bread at Christmas this year.  I went back for seconds. Twice.

It took him a month and a half to get the recipe, but it was worth the wait.

We ate the whole thing today.  And bigSIS only got a tiny piece.  And lilBRO had none.

It’s that good.  I think you must try it.

Here’s the insanely simple recipe.
Crusty Bread
3 cups unbleached all purpose flour
1 3/4 teaspoons salt
1/2 teaspoon yeast
1 1/2 cups water
In a large mixing bowl, whisk together flour, salt and yeast.  Add water and mix until all the dry ingredients are moistened. Cover the bowl with plastic wrap and set aside for 12 – 18 hours.
Heat oven to 450 degrees.  When the oven has reached 450 degrees place a cast iron pot with a lid in the oven and heat the pot for 30 minutes.  (We used cast iron skillet instead.) Meanwhile, pour dough onto a heavily floured surface and shape into a ball.  Cover with plastic wrap and let set while the pot is heating.  Remove hot pot from the oven and drop in the dough.  Cover and return to oven for 30 minutes. (We covered with tin foil since we used the skillet.)
After 30 minutes remove the lid and bake an additional 10 minutes.
Remove bread from oven and place on a cooling rack to cool (for as long as you can stand it).
I admit, I overlooked this recipe on Pinterest a year or so ago because the 12-18 hours in between making the dough and baking scared me away.  Don’t let it. This stuff is ridiculous.
Now go make some for yourself, and then come back and thank me after you devour it.

Jolly Hocks {and a Cookie Exchange}

Some of my favorite people gathered Friday night to chat and exchange Christmas cookies. These girls get together once a month, but I hadn’t seen them in what seemed like ages.

So, despite having notimewhatsoever to bake, I joined them.

My first thought was to go with store bakery-bought goodies, but theBOY shamed me into making something.

Ever hear of Jolly Hocks? Me, neither. But that’s what bigSIS called the delicious treats I made for the get together when she tasted one.

I had to ask Google to be sure I wasn’t in the dark about these Jolly Hocks. Turns out, she’s still a silly three-year-old with an imagination.

I adapted a recipe (with whatever I could find at Target on my lunch break) that my mom gave me, and they turned out super yummy.

Easy Recipe for Jolly Hocks

Ingredients
Two 12 oz bags of white chocolate morsels
10 or so pretzel rods broken into pieces
One 4 oz can of almonds, chopped
One bag of craisins

Directions
Melt white chocolate according to the bag (I did one bag at a time), stir in remaining ingredients. Drop blobs of the yummy goodness on a cookie sheet and pop it in the freezer for a few minutes.

Of course, if you had more time to shop and a better Target, you could use slivered almonds and pretzel bites and you’d save yourself some time in the kitchen.

My Simple Summer Kitchen

One of my favorite dinners to make during the late summer is margarita pizza. It’s easy, delicious and cheap.

This time of year, the tomato and basil plants both overflow with ripe, yummy goodness.

I like to use roughly chopped basil, but theBOY prefers to combine finely chopped basil, olive oil, salt and pepper, then brush the mixture onto the pizza crust. {I use the Betty Crocker pizza crust mix that just require a 1/2 cup hot water.}

I just do it the easy way most of the time – drizzle olive oil and sprinkle salt onto the crust, then add the tomatoes, basil and fresh mozzarella {shredded works, too}!

Bake at 350 degrees for around 15 minutes and enjoy!

Mexican Stuffed Shells

 

This recipe is a little more involved than I like to get on a week night, but reader JoAnn recommended it so highly that I decided to give it a shot.

Luckily, both babes cooperated with me while I assembled the dish.

Even luckier, it turned out great.

I didn’t have any cream cheese in the house (oops!), so I substituted plain Greek yogurt. Worked like a charm.

Angel Food Rice Krispie Treats

A few weeks ago I discovered these Strawberry Shortcake Rice Krispie Treats on Pinterest. That very week, angel food cake went on sale at my grocery store, so I had no excuses.

I followed her recipe for the Rice Krispie treats (except I like to melt my butter and marshmallows on the stove) but I never got around to making the topping.

Why?

Because they were gone before I had the chance.

So mine turned into plain ol’ Angel Food Cake Rice Krispie Treats.

I did stuff a strawberry in my mouth with my last one, and I could tell these would be even better served the way they were intended!

Next time I will make a double batch so they last long enough to actually serve with strawberries.

Getting Dinner on the Table

When I get home from work during the week, the last thing I want to do is cook dinner. I’m exhausted from the day, and I just want to spend time playing with my babies. And some days I just want to go straight to bed.

But until I hire a cook, I have little choice in the matter. So, I make a weekly plan with my arsenal of easy dinners.

And I mean easy.

For a recipe to make the cut, one or more of the following has to be true of it:

1) it’s simple enough for bigSIS to help make it
2) the slow cooker does the work and dinner is ready when we walk in the door
3) it can be whipped up before an episode of Doc McStuffins is over

I know. One day I’ll have time to get fancy in the kitchen, right?? And one day I’ll have a fancy kitchen, right???

Until then, here’s a recipe that I’ve been making for a few months that meets criteria 1 and 3. It’s one of many from Kraft Foods that I make that is easy and yummy.

Snickerdoodle Rice Krispie Treats

Another short and sweet post today because IT’S STILL FEBRUARY!!

I had to share this little gem of a dessert I tried out this weekend. I made this yummy recipe – a Made by Mike original – and the little treats were a hit with both family and friends.

I highly recommend them the next time you need a quick, homemade treat to WOW ‘em!

Hot Cocoa Cupcakes

I can’t believe it’s mid-December already!  Christmas will be here before I know it, and I haven’t even sent my Christmas cards or finished shopping yet. I’m usually much more prepared by now.

Well, if you’re still looking for a treat to take to your holiday get together, look no further. I’m so excited to share my new easy peasy idea!

Hot Cocoa Cupcakes.

The idea came from a picture in Family Circle magazine. The recipe in the magazine was for a typical chocolate cupcake and fluffy white icing, but theBOY had a great idea to improve it. To save time and the anxiety about whether they’d turn out right (my cupcakes usually taste like muffins when I make them from scratch), I bought a boxed cake and a tub of icing.  theBOY mixed 1 1/2 packets of Swiss Miss into the icing, and I piped it on and added the marshmallows & candy canes. Ta-da! Easy.  

YUM!  I will definitely make these again.
